Ingredients: 8 oz Italian sausage 1 Tbsp olive oil 2 cloves garlic, minced 1/2 lb frozen broccoli 2 cups chicken broth 1/3 cup sundried tomatoes, sliced into strips 8 oz your choice of pasta 1/4 cup grated Parmesan
Add sausage and olive oil to a skillet and cook over medium heat until brown. Move the cooked sausage to a bowl and drain most of the fat from the skillet.
Add the broccoli and garlic to the skillet and sauté over medium heat for 3 to 5 minutes, or until the broccoli is no longer frozen. Move the broccoli to the bowl with the sausage.
Add chicken broth to the skillet and stir. Add the sundried tomato strips and the pasta to the broth. Stir, cover the pot, and bring to a boil.
Once it begins to boil, stir, turn to low, and simmer, stirring occasionally, for about 7 minutes or until the pasta is tender and the broth absorbed.
Add the cooked sausage and broccoli to the pasta. If prepping for later meals, save the parmesan cheese to sprinkle on top after reheating.
